NORIKO handroll bar is a new sushi restaurant concept specializing in handrolls, which are prepared immediately in front of you. Each unique handroll is packed with flavor and carefully crafted with high-quality ingredients in this intimate underground space.​

The Noriko Story
We wanted to bring a thoughtful selection of handrolls, made fresh to order and passed directly across the counter, one at a time.
Every seat is the chef’s counter. From your spot at the bar, you’ll watch each roll come to life, handed to you seconds after it’s made.
Our Team

Chef Partner Billy Lim
Chef Billy didn’t grow up dreaming of sushi. In fact, he didn’t even like it at first. But working as a delivery guy for a sushi spot in Northbrook changed everything.
He worked his way up from tempura station to training under Chicago sushi legend Toku Iwamoto where he saw how sushi could be a canvas for creativity.
After a detour in tech, a hand roll in NYC reignited everything. Chicago needed a handroll bar and he knew just the place to do it.

Chef Partner Rhan Whang
Rhan spent three months traveling solo through Korea, eating and studying his way through the country. When he came back, he led kitchens at Cabra and returned to Girl & the Goat as CDC.

But sushi had a hold on him. Together, with the other partners, he opened Noriko. It felt like home.

Rhan is an expert in understanding ingredients, blending unique flavors, and strives for perfection in his creations. And we’re lucky to have him.
