Service Charge at Noriko

The hospitality industry is changing, and we want to help build a fairer model.

We're committed to building lasting careers for everyone on our kitchen and front-of-house teams. Transparency is at the heart of how we operate.

Why a Service Charge?

A flat 22% service charge is added to all bills and distributed in full to our hourly team, including kitchen staff. Any additional gratuity is optional and goes directly to the team who cared for you during your visit.

Traditional tipping has created real inequities, especially for hard-working kitchen and support staff who rarely receive tips. Service charges allow us to share revenue more equitably across the entire team. Recent legislation in Chicago and Illinois has raised wages for some roles but doesn’t fully address the gap for those who can’t earn tips.

At Noriko, the chef team and the service team are equal parts of the service that you receive. We believe everyone who contributes to your experience should be supported fairly. Where traditional tipping has created real inequities, service charges allow us to share revenue more equitably across the entire team.

Unlike simply raising menu prices, our service charge is paid out entirely as wages to the team. We’re committed to transparency so you understand exactly how your support helps our entire staff. Our goal goes beyond great food and service. We believe taking care of our people is part of delivering true hospitality, and we hope this approach inspires positive change across the industry.

Thank you for supporting independent restaurants like Noriko Handroll Bar and helping us create better careers in hospitality.
